Hyll, is set to open in the North Cotswolds in summer 2025. The 26-bedroom property is the first project from Madfabulous Hotels, founded by entrepreneurs Paul Baker and Sarah Ramsbottom.
Restored Manor House with a Unique Experience
Hyll takes its name from the old English word for an elevated position and is housed in a restored Grade II-listed 17th-century manor house set within a 60-acre estate. The hotel promises a “restorative travel experience” focused on culture, art, and literature.
Paul Baker, founder of the international bakery brand St Pierre Groupe, and Sarah Ramsbottom, with 20 years of experience in the events industry, including the redevelopment of Grade II*-listed Soughton Hall near Chester, are the driving forces behind Madfabulous Hotels.
Design and Dining
Designed in partnership with Manchester-based Youth Studio and Jolie Studio, Hyll will feature a restaurant led by head chef Mark Coleman, serving dishes that highlight local produce. The manor house will accommodate eight bedrooms, lounges, a restaurant, a snug, and a bar. Former outbuildings will house four suites and 14 rooms equipped with Natural mat beds, Verden toiletries, Grind coffee machines, and Dyson hairdryers.
Future Developments
In early 2026, Hyll will expand to include a new 150-capacity barn-style building which will cater for weddings and corporate events.
Ramsbottom added: “What we are really seeking to achieve at Hyll is to provide a space where guests genuinely feel like they have an opportunity to pause and where they can just ‘be’ – whether that’s in the gardens, staying in bed, eating home-cooked food, or curling up in a chair with a book.”
