Hilton Molino Stucky Venice, the iconic Venetian hotel and former flour mill on Giudecca island, is delighted to reveal a bold new look and signature cocktail menu for its award-winning rooftop bar, Skyline.

Featuring a vibrant, refreshed interior inspired by the city’s colour palette and an interactive menu that matches guests with their perfect pour, the relaunched Skyline Rooftop Bar promises the hottest reservation in Venice this summer.

With a talented team of mixologists under the helm of Bar Manager Valentina Mircea, Skyline is the highest bar in the city, loved by hotel guests and locals alike. A Bold New Look

Skyline debuts a brand-new look this season, with a refreshed interior design that fuses vibrant colours with bold patterns and modern touches. A colour palette of vibrant reds and oranges and soothing greens and blues reflects the beauty of Venice at sunset, with the blazing skies reflected in the turquoise lagoon below.

A variety of seating options – from cosy nooks to large convivial spaces – provide the perfect sipping spot whether guests wish to enjoy a laid back aperitivo à deux or a late night festa with the whole gang. Bar stools provide a front row seat for those looking to watch the mixology masters at work, with terrace seating offering unparalleled views of the city of canals beyond.

‘Skies of Venice’ – A New Signature Cocktail Menu

This summer sees the launch of ‘Skies of Venice’, a brand-new signature cocktail menu at Skyline Rooftop Bar. An immersive and interactive experience, guests simply scan the QR code on the menu to find their perfect cocktail. Here, they can filter the cocktail offering based on their preferences and palette, with all selections defined by three main sensory profiles; taste, feeling and consistency. Each category corresponds to a different element, which when combined creates a distinctive icon for each and every cocktail.

The brainchild of talented Bar Manager Valentina Mircea, the menu features locally sourced and zero waste elements as part of Hilton Molino Stucky Venice’s ongoing commitment to sustainability. These include the hotel’s very own Stucky 1975 Venice Gardens Gin, and Skyline’s special ‘super lime juice’, extracted using the entirety of a lime, ensuring zero waste and maximum flavour.

Formerly a flour mill factory on the peaceful island of Giudecca, Hilton Molino Stucky Venice is a modern Venetian masterpiece steeped in history. This listed building has been beautifully restored with a series of recent refurbishments, including 24 new suites by famed interior designer Biagio Forino unveiled in April 2024. After arriving by water taxi, guests will be spoiled for choice with 379 rooms and suites, one of the largest spas in Venice, and a collection of bars and restaurants.
