Part of the Omicron Hotel Group, Acro Suites and Seaside; A Lifestyle Resort, Crete, will partner with a series of internationally renowned Michelin Star chefs to launch an extraordinary series of culinary experiences this summer.
The collaborative calendar of events will see each chef in residence for two days from June to September, creating stunning, seasonal menus to highlight the unique culinary flair they’re known for.
‘The Four Hands Menu’ partners the Acro Suites Executive Chef, Yannis Rokanas, and Seaside’s Executive Chef, Μanolis Κastanakis with six globally acclaimed Michelin Star chefs including Thierry Mechinaud, Nicky Arentsen, Christian Sturm-Willms, Gerardo Metta, Federico Campolattano and Koosh Kothari, each bringing their own specialist cuisines to Cremnos Restaurant at Acro Suites and Oceana Restaurant and UMI at Seaside, A Lifestyle Resort.
Yannis Rokanas – Executive Chef of Acro Suites
Greek born Rokanas’ found his passion for cooking from a young age and studied at Le Monde Culinary School of Athens. His journey has seen him work alongside some of his culinary ‘heroes’ and Michelin Star Chefs. He strives to experiment with a focus on flavour, creating new recipes that explore the depths of Greek culinary history. By combining traditional recipes with new ideas and techniques he enjoys bringing something new to the table. He’s devoted to local, seasonal produce and collaborating with Cretan farmers and grocers, whilst minimising food waste.
Μanolis Κastanakis , Εxecutive Chef of Seaside
A Lifestyle Resort Kastanakis, was born and raised in the charming village of Koxari, nestled in the heart of Heraklion, Crete. From the tender age of a budding food enthusiast, he discovered his passion for the culinary arts, igniting a relentless pursuit of growth and culinary knowledge.
Nicky Arentsen
Michelin-starred Danish chef and winner of the Michelin Young Chef Award 2024, is known for his bold yet minimalist approach, where he lets every ingredient shine with precision and creativity. He co-founded Restaurant Aure, which earned a Michelin star just 81 days after opening. This season, he will be a visiting chef at Acro Suites & Seaside A Lifestyle Resort, bringing his signature minimalist and boundary-pushing flavours to our guests for an exclusive culinary experience.

Christian Sturm-Willms
Executive Chef of Yunico, a Japanese fine dining restaurant in Bonn, which he has led since 2012. Under his expert guidance, the restaurant has been awarded with one Michelin star every year since 2016. The Michelin Guide describes his cuisine as a harmonious blend of Japanese tradition, subtlety, and fascinating modern European influences, offering a truly unique and refined dining experience. This season, Christian Sturm-Willms will join Omicron for an exclusive four-hands menu event in collaboration with our chefs, Giannis Rokanas and Manolis Kastanakis, at Cremnos restaurant.
Additionally, he will host a one-night-only dining experience at Umi, presenting a menu inspired by the refined culinary philosophy of his renowned restaurant, Yunico.

Gerardo Metta, a Michelin-starred chef
He began his culinary journey at 19 in Italy, discovering his passion at the Einaudi Institute. He gained experience in Brussels before earning two Michelin stars at Sea Grill. At 26, Gerardo became one of Europe’s youngest Michelin-starred chefs at Da Mimmo. Recognised amongst the world’s top 50 Italian chefs, Gerardo also champions youth empowerment in Puglia, aiming to revitalise communities and preserve the region’s culinary heritage. In 2024, he earned a Michelin star in Switzerland, becoming one of the country’s most respected chefs.

Federico Campolattano
A visionary chef who has owned the Eichhalde restaurant with his wife Valentina in the green German city of Freiburg in Breisgau since 2019. His cuisine is purist, pleasingly reduced to the essentials and authentically Italian, in a form of expression that is very rarely seen in Germany, and he received a Michelin star for it.

Thierry Mechinaud is a highly acclaimed chef de cuisine of Pierre Gagnaire.
Holding a total of 12 Michelin stars, with the flagship Pierre Gagnaire Paris earning 3 Michelin stars under his guidance. Mechinaud’s culinary expertise, creative flair, and dedication to delivering exceptional dining experiences have solidified his position as a key figure within the industry. His collaborative work with Pierre Gagnaire has resulted in the creation of extraordinary dishes that have delighted diners and garnered widespread acclaim. Mechinaud’s commitment to culinary artistry and his ability to push the boundaries of gastronomy have firmly established him as a respected and influential chef de cuisine.

Koosh Kothari a talented and dynamic chef
Homing his skills at Lima’s most prestigious restaurants, including Mérito, Kjolle, and Central, which was named the World’s Best Restaurant in 2023 by the World’s 50 Best. With a deep passion for innovation and creativity, Koosh curates exceptional gastronomic experiences that celebrate the vibrant traditions of Peruvian cuisine, thoughtfully elevated with the bold and intricate flavours of his Indian heritage. This season, he will bring his culinary expertise to Cremnos and Oceano for two special events, presenting his exceptional fusion of flavours at each of our restaurants.
