The hotel’s afternoon tea has been reimagined for the anniversary as a journey through five decades of British social history, pairing classic finger sandwiches and warm scones with a Heritage Flight of pastries that trace the hotel’s story from its 1870s opening to the present day. The tea is served with a bespoke 150 Years of The Bailey’s Rose Jubilee Tea, a Sri Lankan black tea blended with freeze-dried raspberries, rose petals and rosebuds, created with British tea partner Hoogly Tea. Traditional Afternoon Tea is priced at £45 per person, with a Champagne Afternoon Tea available at £55 per person.

Celebration Tasting Menu at The Bugis Singapore Restaurant

At The Bugis Singapore Restaurant, a five-course anniversary menu called The Trade Winds traces the historic trade routes connecting Southeast Asia to Victorian London. The journey runs from a delicate crab meat and sweet corn soup, through a sharing centrepiece of sizzling Scottish Angus beef, seafood claypot and vegetable fried rice and closes with a mango, coconut cream and tapioca pearl dessert.
The Trade Winds is priced at £60 per person (minimum two people), with an optional five-glass wine pairing flight, chosen by the restaurant’s sommeliers, available for £70 per person.
