Mollie’s confirms fourth UK motel with 200-room development in Edinburgh park

Mollie’s announces its fourth UK motel and diner in Edinburgh Park, set to open in 2028. The 73,000 sq ft eco-conscious property will feature 200 rooms, meeting spaces, EV charging and excellent transport links.

The contemporary motel and diner brand inspired by classic American roadside hospitality, has unveiled plans for its fourth UK location—this time in Scotland. The £multi-million development is scheduled to open in 2028 at Edinburgh Park, subject to planning approval and licensing.

Spanning approximately 73,000 sq ft, the proposed site will deliver around 200 rooms alongside a retro-chic diner, outdoor terrace, flexible meeting and event spaces, and ample cycle and car parking. Electric vehicle charging stations and connectivity to nearby rail hubs underscore its business travel appeal.

Positioned near Edinburgh Park Station and aligning with the City Plan 2030 vision, the new location aims to support the transformation of South Gyle into a mixed-use business and leisure district. This expansion marks Mollie’s first foray into Scotland, joining its existing sites in Bristol and Oxfordshire, and a Manchester property slated to open later this year.
