The hardest table to reserve in town can tell you a lot about a destination.
In Calgary, the tables worth travelling for pair distinctly Alberta ingredients and international influences with a sense of place that can’t be replicated elsewhere. As dining increasingly drives travelers’ destination decisions, Calgary gives food-focused travelers a reason to secure a seat at the table before booking their flights.

Recently launched in partnership with Rouge and Tourism Calgary’s new Blue Sky Experiences, Forage to Table takes visitors to Saskatoon Farm with Chef Paul Rogalski and foraging expert Denis Manzer. After gathering ingredients directly from the land that showcases the destinations’ terroir with visitors, guests return to Rouge, a historic garden-to-table restaurant, where the original Calgary Stampede agreement was signed, for a four-course dinner and wine pairing inspired by the day’s harvest. Throughout the evening, Chef Rogalski regales guests with stories from his time alongside Survivorman’s Les Stroud on the award-nominated PBS series Wild Harvest. This is one reservation worth planning ahead for.
Restaurant newcomers DOPO and Francine’s have quickly become the local’s favourites and Calgary’s hottest tables to reserve. DOPO offering Italian classics with a tiramisu to die for that you can text the owners mother Rose to say thank you for the recipe, and Francine’s menu filled with so much butter you can purchase a $0.25 lactaid pill as a side. But don’t wait until you arrive to secure your spot, these buzzy new restaurants fill up fast.
In Calgary, a restaurant isn’t simply a place you ate while visiting, it’s the reason you booked the trip in the first place.
