Gleneagles has opened a new chapter in its culinary history with the launch of The Cellar x Dom Pérignon, a reimagining of the Perthshire estate’s 100-year-old wine cellar into an intimate, high-end private dining room.
The move marks the start of a new partnership between the iconic Scottish hotel and the Champagne house, bringing together heritage, craftsmanship and contemporary luxury in a space that seats up to 12 guests.
The cellar, long used for storing and ageing rare wines and spirits, has been transformed into an atmospheric dining room that blends original character with Dom Pérignon’s signature aesthetic. It remains a working cellar, sitting among Gleneagles’ collection of Burgundy, Bordeaux and Super Tuscan wines, with bespoke Champagne cabinets built into custom wooden joinery to hold bottles at the precise temperature for ageing and service.
Design details draw inspiration from Dom Pérignon’s birthplace, the Abbey of Hautvillers in Épernay. A custom-made travertine dining table, echoing the chalk, clay and limestone soils of the Champagne region, forms the centrepiece of the room. Its scale required it to be delivered by crane in two pieces, then lowered through a historic service hatch last used for unloading wine deliveries in the 1920s and 30s.
Guests booking the space can also explore a dedicated library showcasing more than 40 Dom Pérignon rarities, offering a deep dive into the Maison’s evolution and creative philosophy. As Champagne house The Drinks Business reports, trains once carried wines north from London for the original cellar, with bottles lowered by hand into the space below, a sense of provenance the new room leans into.
A series of curated experiences is now available, ranging in price and ambition. At the more accessible end sits the Dom Pérignon & Canapé Reception, featuring two glasses of Dom Pérignon Vintage 2017 and four canapés per person, alongside a Dom Pérignon Tasting of five rare expressions paired with matching bites.
For a fuller gastronomic immersion, the Cellar Experience begins with Dom Pérignon Vintage 2017 and King’s Golden Oscietra Caviar before moving into a five-course tasting menu with wine drawn from Gleneagles’ extensive list. The signature Dom Pérignon Experience elevates this further still, pairing each course with a different Dom Pérignon cuvée, including Vintage 2017, Rosé 2010 and Vintage 2008 Plénitude 2. The launch adds to a luxury proposition that already includes 232 bedrooms, three golf courses, a spa and a two-Michelin-starred restaurant, reinforcing Gleneagles’ standing among Scotland’s flagship leisure and corporate hospitality destinations. It is a space that will appeal equally to private celebration and high-end client entertaining, an area where Scottish properties continue to compete hard, as seen in the continued expansion of luxury hotel groups across the UK and beyond.
