United Airlines is elevating its long‑haul dining experience this summer with the launch of 30 new chef‑designed dishes for Polaris international business class, debuting August 1.
The menus are the result of a major collaboration with Chef’s Table, the team behind the Emmy‑winning Netflix series, bringing together 11 world‑renowned chefs from four continents to create dishes inspired by the United city they call home.
The new programme introduces a full multi‑course experience — appetiser, salad and entrée — with menus tailored to cities including Los Angeles, Chicago, London, São Paulo and Tokyo. Highlights include burrata with braised leeks from Nancy Silverton, Brazilian shrimp stew from Manu Buffara and poached scallop with yuzu‑ginger glaze from Tashi Gyamtso.
United says the partnership aims to “redefine what inflight dining can be,” using the airline’s global network to showcase culinary perspectives from leading food destinations. Each dish has been engineered specifically for altitude, ensuring flavours remain balanced at 35,000 feet, according to Chef’s Table president Justin Connor.
Travellers will also see the collaboration reflected on their seatback screens. From August 1, United will debut exclusive behind‑the‑scenes content showing how the chefs developed the new menus, alongside video podcast episodes from Chef’s Table: Talks.
The menus will run through September 2026, with a new seasonal lineup launching in October and rotating into 2027. Polaris customers can pre‑order their preferred Chef’s Table dishes from five days to 24 hours before departure via the United app or website.
