British business travellers looking for a memorable way to entertain clients or mark a milestone in Singapore have two new options, after Mount Faber Leisure Group unveiled a pair of private dining journeys for Cable Car SkyDining, served 100 metres above sea level in a dedicated cabin on the Singapore Cable Car.
The Singapore Chronicles retraces the city state’s history through a menu built around local flavours, while Starlight Flight serves contemporary Mediterranean cuisine against the skyline of modern Singapore. The timing is worth noting for anyone heading east this month: a one-for-one promotion running until 31 August 2026, marking Singapore’s 61st birthday, brings the heritage menu down from S$108++ to S$54++ per guest.
In 1998 the Singapore Cable Car became the world’s first to offer private dining aboard a cable car cabin, and more than 25 years on the experience still has few rivals as a talking point. Journeys take in sweeping sunset views of Singapore’s southern coast, the hilltop setting of Mount Faber Peak and glimpses of the nightly fireworks on Sentosa. For UK firms, Singapore remains a key Asia Pacific base, and the launch adds to a busy spell for the city’s hospitality scene following the arrival of Raffles Sentosa Singapore and Marriott’s boutique Varel Singapore.
A private cabin journey through Singapore’s history
The Singapore Chronicles is a three course menu in which each dish reflects the ingredients, cultures and traditions that shaped the nation’s growth from fishing village to global city. Guests begin with a welcome drink at Dusk @ Mount Faber Peak, choosing between Temasek Sunset, a blend of chai, grilled pineapple, pandan and lime, or Nanyang Twilight, made with gin, butterfly pea, coconut water and lime.
The starter, Tiger Prawn Tea Rice, pairs aromatic herb rice and salmon roe with a jasmine tea kelp broth and wild tiger prawns, a nod to Singapore’s maritime heritage. For the main course, diners choose between Crispy Red Snapper with sweet potato puree, coconut curry and laksa leaf oil, drawing on Peranakan cooking, and Char-grilled Lemongrass Chicken with confit leek, sweet potato, black pepper puree and toasted coconut. Dessert, Sweet Harmony in Diversity, brings pandan, gula melaka and European custard together in a single course.
Mediterranean flavours on the Starlight Flight
Starlight Flight is curated by Barcelona-born executive sous chef Daniel Vaquero, who draws on 18 years in Catalan and Spanish kitchens. The four course menu, priced at S$118++ per guest, opens with a welcome drink and Sauteed Hokkaido Scallops at Dusk @ Mount Faber Peak, followed on board by a Tiger Prawn Salad with stracciatella and six varieties of heirloom tomatoes from Spain and Italy.
Mains include the Catch of the Day, pan-fried seasonal fish with cauliflower puree, citrus sauce and Kalamata olive spheres, and a Wagyu Ribeye, an Australian marbling score 4/5 cut served with roasted hazelnut romesco, piquillo peppers and a potato mille-feuille. Guests can upgrade to a Grilled Boston Lobster on Arborio rice simmered in a Catalan seafood suquet for a further S$38++. The evening closes with a Red Plum Brulee at Arbora Cafe @ Mount Faber Peak. A three course version costs S$108++, and vegetarian menus are available.

Both experiences follow the same format: drinks at the peak, then the central courses served across two scenic rounds of the Mount Faber Line, around 60 minutes in total, with views over Mount Faber, HarbourFront and Sentosa.
