Hanoi’s Metropole lines up Michelin double bill for May
Executives in the Vietnamese capital at the end of May have a diary entry worth making. The Sofitel Legend Metropole’s flagship French restaurant, Le Beaulieu, has secured two Michelin-starred guest chefs for a short residency over the closing weekend of the month.
On 29 and 30 May, Hiroyuki Matsumoto of one-starred Restaurant Prunier in Tokyo joins Le Beaulieu’s chef de cuisine, Charles Degrendele, for a four-hands dinner under the restaurant’s Rendez-vous banner. Matsumoto trained in France, including a stint at the three-starred La Côte d’Or, and is known for applying Japanese precision to classical French technique. Dinner runs from 6pm to 10.30pm at VND 4,900,000++ per head, or VND 7,400,000++ with wine pairing — roughly £150 and £225 respectively.
Sunday 31 May brings a Provençal edition of Le Beaulieu’s Sunday brunch, with Louis Gachet of the one-starred Le Feuilée at the stoves. Sittings run from noon to 3.30pm, priced from VND 3,500,000++, with free-flow wine and Champagne options.
