Cashel Palace Hotel has added a new chapter to its drinks story with the launch of its Three‑Year‑Old Irish Pot Still Whiskey – a spirit that feels deeply rooted in Tipperary’s Golden Vale.

Building on the success of its 1732 gin, the hotel has created a whiskey that goes far beyond the typical “hotel‑label” bottle. This is a genuine field‑to‑glass collaboration shaped by Coolmore Farms’ barley and distilled by Tipperary Boutique Distillery, giving it an authenticity that mirrors the hotel’s own heritage.

The whiskey’s character is immediately inviting. Matured in first‑fill Oloroso sherry casks, it pours a rich amber and opens with aromas of dried fruit, dark chocolate, figs and warm spice. For a young whiskey, it’s surprisingly expressive, rounded, warm and layered, with a depth that lingers. It’s crafted to be memorable, and it succeeds.
